Why is Safeway Fresh Foods recalling their Organic Butternut Squash products?

The recall is due to potential contamination with Escherichia coli O45. This strain of E. coli can cause a diarrheal illness, often accompanied by bloody stools. While most healthy adults can recover fully within a week, there is a risk of developing Hemolytic Uremic Syndrome (HUS), a form of kidney failure. HUS is more likely to occur in young children and the elderly, and it can lead to severe kidney damage and even death.

Who is affected by this recall?

The affected 32-oz. diced Butternut Squash was exclusively distributed to Costco stores in the following states: Washington DC, Maryland, Pennsylvania, and Virginia.
