Quick and simple recipes will always be favored by those who just want to get in and out of the kitchen with a delicious but fast meal. When you’re following a healthy lifestyle or following a meal plan, simple recipes allow you to monitor the ingredients you’re putting into your dishes to prevent any unnecessary calories.
This simple 4 ingredient Banana Pancakes Recipe is clean, quick, easy, and can satisfy any sweet tooth, without being overly sweet. At just over 200 calories, this pancake option has great nutritional values to start your day off correctly. You get your protein and healthy fats from the eggs. Fiber and healthy carbs come from the bananas.
I have tried a few different variations of this recipe and just could never get the consistency I was looking for. The original recipe I tried was simply just 1 or 2 eggs and 1 banana. Unfortunately, that combination was a bit too simple for my taste buds.
I then tried a variation from a meal plan I was following. They suggested 2 eggs, 1 banana, and a dash of baking powder. The consistency of this pancake was still too “wet” for my liking.
After a vigorous google search, I came upon Feel Good Foodies recipe that referenced adding a small amount of an ingredient that I believe I was missing; Flour! Not a lot of flour, but just enough to make the consistency more pleasing to a pancake lover.
Combining aspects of all three recipes finally got me to the destination I was looking for. This Simple 4 ingredient Banana Pancakes Recipe actually took me by surprise. I didn’t plan on blogging about it or recording it. As I was making this variation though, something told me to turn to turn the camera on and I’m so glad I did. I’ve enjoyed this recipe a few times and decided to share it with you.

One Medium Ripe Banana
The most important ingredient in this recipe is an overly ripe banana. Bananas get sweeter as they ripen as their starches are broken down into sugar.
One Large Egg
Brown, White, Cage free, or not, one egg is all that is needed to bind this recipe together.
Regular or Gluten free – any baking powder on hand will do.

Preparing This Recipe
Beat your eggs.
Peel and mash banana.
Combine your baking powder and flour in a separate bowl.
Add wet ingredients to the dry ingredients. Mix well
Pour the batter onto the preheated prepared griddle.
Cook the pancakes on one side until bubbles form, then flip.

After viewing Feel Good Foodies recipe I combined aspects of all three recipes to get me to the consistency I was looking for.
- 1 over ripe medium banana (100g), mashed
- 1 large egg, beaten
- ½ teaspoon vanilla extract (optional)
- ½ teaspoon baking powder
- 2 Tablespoons whole wheat flour
- 1-2 Tablespoons of crushed walnuts (optional)
- 1-2 Tablespoons of sugar free maple syrup, agave, or honey (optional)
- Mix 1 egg and 1 banana together. (Optional: add in ½ teaspoon of vanilla extract)
- Mix in the ½ teaspoon of baking powder and 2 tablespoons of whole-wheat flour.
- Lightly oil the griddle using a combination of spray and butter.
- Preheat lightly oiled griddle under medium heat.
- Pour 1/4 cup measuring cup of pancake mix onto a griddle for two small pancakes.
- Cook 2 – 3 minutes until the top of pancakes have bubbles.
- Flip carefully with a thin spatula.
- Cook until brown and crisp, about 2 – 3 minutes, adding more olive oil spray and butter if needed.
- Transfer to a plate.
- Top with 1-2 tbsp. nuts and a drizzle of honey or maple syrup.
To quickly ripen a banana, cook the peeled fruit, on parchment paper, on a baking sheet, in a 300 degrees Fahrenheit oven for 30 minutes.
Instead of 1 large egg, a 1/4 cup of egg substitute could be used instead.
