RECIPE: Kodiak Cakes Protein Pancakes

I normally make my pancakes from scratch. I saw KodiakCakes on an episode of Shark Tank and had to try them out! The mix is already done for you, all you need to do is add water! By just adding water, the pancake mix already has 14g of protein! Alternatively, you can add-in the egg (product) of your choice, and the milk (product) of your choice and it instantly ups the protein content! Even more importantly, they taste great!

Ingredients

For the basic recipe, you’ll only need:

  • 1 cup of Kodiak Cakes Mix
  • 1 cup of water

Directions

In a medium bowl, stir ingredients until the batter is combined ( do not BATTER your batter – do not overbeat ). Pour 1/4 cup of batter onto a pre-heated non-stick griddle or pan on medium-high heat, until bubbles form on the outer circle of the pancake. Flip and continue to cook until golden brown.

Alternative Kodiak Cakes instructions with milk and egg:

  • 1 cup of Kodiak Cakes Mix
  • 1 cup of milk (product)
  • 1 egg (or 1/4 cup of egg substitute)

DO NOT:

Double flip!
Flipping more than once can dry out your cakes!
Be patient and time it out appropriately

DO NOT:

Flatten them (like a pancake, HAHA). A fatter cake will actually be fluffier! Smashing it down just compresses the air. If you want a thinner pancake, spread the mixture out WIDER/thinner when applying to the griddle or pan or add more liquid.
